Competition Pedigree: Inmaculada & The Enigmatic Ají

Inmaculada has long been legendary on the world competition stage, revered by world-class competitors for pushing the boundaries of botanical exploration and processing precision. Ají (often referred to as Bourbon Ají) is a rare Ethiopian landrace variety that has taken the specialty world by storm. However, because of its unique genetic profile, the vast majority of Ají on the market has historically been used as a canvas for aggressive, heavy experimental fermentations, obscuring the delicate soul of the plant.

Unmasking the Cultivar via Classic Washed

Through the Inmaculada Fellows selection, we have finally secured what we have long been searching for: a pristine, classic washed lot. By stepping away from heavy fermentation masks, this immaculate washed process allows the authentic genetics and true varietal character of Ají to shine in their purest form—celebrating transparency, botanical poise, and uncompromising cup clarity.

The Cup Profile

In the cup, this coffee strikes a captivating balance between ethereal delicacy and remarkable presence. Supported by a deceptively thick, tactile mouthfeel and bold, saturated sweetness, it bursts with vibrant tropical complexity. Crisp, tart notes of fresh star fruit harmonize with the lush, honeyed sweetness of ripe longan, all framed by an elegant, crystalline bouquet of clean daisy florals that lingers across a bright and perfumed finish
