V60 recipes for Comandante C40 grinder with Aquacode(100ppm)

Introduction

In this article, we aim to provide a V60 recipe that can be your starting point to try our coffees with an explicit bench mark. Comandante grinder and Aquacode brew are the best renowned tools in the world, which are perfect to build recipes on a global standard for our customers world wide.

Recipe for 18grams dose

We basically recommend 18grams dosing with this recipe for V60 01 model. On a fixed grind setting and ratio, 18grams dose offers a bit higher TDS/EY with almost same total brewing time that indicates there is reduced risk of channeling in the 18g dose with the recipe below when it’s compared to our 15grams recipe. Since larger dose offers more evenness of extraction and forgiving to grind quality, you can enjoy variable grind settings besides our recommendation. If you want your coffee to be brighter and to features flavors more, try a bit coarser grind setting (25or26) for a slightly lower TDS/EY.

Brew Temperature: 93°C(88°C for low grown or less dense naturals)

Grind setting: 24clicks on Comandante

Water Hardness: 100ppm(1:6 on Aquacode)

Target TDS: 1.25-1.35

Preparation

Rinse the filter and dose 18grams of grounds, we recommend using "Blind Shaker" for accurate dose. Then shake to make the bed flatten. This process is same as our V60 brew guide.

Dose into “Blind Shaker”

(1)1st pour(bloom)

Pour 60g of water for blooming by 8seconds on your timer and give swirl to the slurry by doing the "Rao Spin" after pouring.

Bloom phase

Resume pouring at 45seconds on your timer to hit 140grams on the scale and finish it at 1min on your timer. Give it a swirl by doing the "Rao Spin."

2nd pour

Resume pouring at 1:25mins on your timer to hit 220grams on the scale and finish it at 1:45mins on your timer. Give it a swirl by doing the "Rao Spin."

Resume pouring at 2:15mins on your timer to hit 300grams on the scale and finish it at 2:30mins on your timer. Give it a swirl by doing the "Rao Spin."

Wait for the water to drawdown completely.

1st pour pour(bloom)

40g of water for blooming by 8seconds on your timer and give swirl to the slurry by doing the "Rao Spin" after pouring.

2nd pour

Resume pouring at 45seconds on your timer to hit 160grams on the scale and finish it at 1:05mins on your timer. Give it a swirl by doing the "Rao Spin."

3rd pour:

Resume pouring at 1:30mins on your timer to hit 255grams on the scale and finish it at 2mins on your timer. Give it a swirl by doing the "Rao Spin."

Wait for the water to drawdown completely.
