Degassing notice
We recommend degassing this coffee for at least 35 days, up to 70. Our coffees often peak around 45 days and 60 days post-roast and are best enjoyed from then until the 90 day mark.
Our omniroast style leads to abnormally long degassing times, but just trust us, once your coffee is degassed properly, you're in for a treat.
*Please make sure not to vacuum or freeze the coffees while it's degassed enough.

El Injerto has been regarded as the most award winning farm in Guatemala with their superb quality Geisha and Pacamara.
This Pacamara is from their experimental plot called "Patagonia" that is relatively new to their farm and our first purchase of this coffee was in 2022, that was full of bright tropical vibes.
After 3 years, the trees got rooted more to the land and this Pacamara has become a truly fruitiness forward coffee and a plethora of juicy fruit flavors.
Expect juicy guava with hints of passionfruit, followed by vibrant orange flavors, and fresh black currant throughout.
