Degassing notice

We recommend degassing this coffee for at least 35 days, up to 70. Our coffees often peak around 45 days and 60 days post-roast and are best enjoyed from then until the 90 day mark.

Our omniroast style leads to abnormally long degassing times, but just trust us, once your coffee is degassed properly, you're in for a treat.

*Please make sure not to vacuum or freeze the coffees while it's degassed enough.

Last summer we tried Elkin's Chiroso for the first time, and it quickly became one of our favorite new varietals.

This cultivar in particular is popular in Urrao region, and has a delicious intensity and exceptional vibrancy that is very likely from its Ethiopian landrace genetics.

This year's lot is even more vibrant and actually a surprise to us.

Expect bright grapefruit followed by juicy guava, and unprecedentedly vibrant osmanthus florals.

About Chiroso and Bourbon Chiroso

Genetic analysis has confirmed that Chiroso belongs to the Ethiopian landrace group. It was originally discovered among a batch of Caturra plants, which led to the mistaken name “Caturra Chiroso” given by its discoverer. As Chiroso was cultivated by more producers, some began to observe taller plants during seedling period. Based on these physical traits, farmers started referring to it as “Bourbon Chiroso” to differentiate it.

Through genetic fingerprinting in laboratory, we found that Bourbon Chiroso is genetically similar to, but not identical with, Caturra Chiroso. It can be considered a variant, with differences in specific genetic segments that manifest in plant height, cherry shape, and color.
