Degassing notice
We recommend degassing this coffee for at least 35 days, up to 70. Our coffees often peak around 45 days and 60 days post-roast and are best enjoyed from then until the 90 day mark.
Our omniroast style leads to abnormally long degassing times, but just trust us, once your coffee is degassed properly, you're in for a treat.
*Please make sure not to vacuum or freeze the coffees while it's degassed enough.

One of our all-time favorites is back, Pie San Yellow Typica, our exclusive lot. We've been bringing this exclusive coffee since 2021.
Originally, they started producing this coffee for Costa Rica BrC champ, and the lot size was extremely small. Even in 2021, the entire lot size was just a carton of 23kg. Since then our favorite trees have been thriving to produce enough for more than 100kg in 2025!
This year's lot reflects the prosperity of the trees in the flavors and acidity. Unlike previous years harvests, this coffee tastes like some high grown Geishas with its vibrant florals and a very rich acidity. We believe this is a sign that this coffee got rooted well to the land.
Expect juicy pineapple followed by vibrant lavender florals and sweet peach in the finish.
