Degassing notice

We recommend degassing this coffee for at least 35 days, up to 70. Our coffees often peak around 45 days and 60 days post-roast and are best enjoyed from then until the 90 day mark.

Our omniroast style leads to abnormally long degassing times, but just trust us, once your coffee is degassed properly, you're in for a treat.

*Please make sure not to vacuum or freeze the coffees while it's degassed enough.

Yellow Pacas - Washed

Nicaragua

This coffee is truly something special. Have you tried a Yellow Pacas before?

This varietal might be one of the rarest coffees in the world. As far as we (us and Wingo) know, we haven't tried nor heard of Yellow Pacas existing in the past. One day, Wingo's grandfather, accidentally found one of their Pacas coffee trees had started to grow yellow cherries, which after harvesting was found to be a reverse mutation from their Yellow Pacamara (a crossbred varietal of Pacas and Maragogype), into a Yellow Pacas. The Yellow Pacas is super dense and hard, with an incredibly unique sweetness and fruity quality. If you haven't tried a Yellow Pacas before, you might as well now.

In the cup we find a succulent blueberry jam with sweet hints of ripe banana alongside perfumed notes of banana, finished by a juicy clementine aftertaste.

Our tasting notes:

  • blueberry jam, banana, clementine

Area: Jinotega, Nicaragua

Altitude: 1400 masl

Varietal: Yellow Pacas

Process: washed
