Degassing notice
We recommend degassing this coffee for at least 35 days, up to 70. Our coffees often peak around 45 days and 60 days post-roast and are best enjoyed from then until the 90 day mark.
Our omniroast style leads to abnormally long degassing times, but just trust us, once your coffee is degassed properly, you're in for a treat.
*Please make sure not to vacuum or freeze the coffees while it's degassed enough.

Sourced in collaboration with our friend and partner, JV, here are three delicious geishas that we can't wait to share with you. These are beautifully done, maintaining their Panamanian DNA while also introducing incredible flavor variety and tasting experiences. In 2023 we had our first experience with these coffees, and we were blown away. This harvest though, takes it to a whole new level, genuinely some of the best coffees we've had ever. And with our new A.I. green bean sorting machine, we can't express how mindblowingly good these are.
Incredibly refined, bold flavors while maintaining complexity. Typically we cup many of our coffees together during a session, but we were unable to cup these together with other coffees as the taste of these would linger in every cup.
- Orion is JV's favorite, and apparently one of the top 5 best coffees he's ever had in his life. This coffee is incredibly complex with its yeast fermentation natural process, and bursts with intensity. Out of the 3, this is by far the most complex and intense. It reminds us a lot of bollinger rose champagne, and has impressed us so much. We find notes of strawberry, white grape, rambutan, and rose florals.
- MamaCoco is the sweetest Geisha we've ever had. It is absurdly sweet, almost overpowering but just on the brink where it is still drinkable. It has an incredibly rich mouthfeel and a wonderful tart acidity to go along with its sweetness. We find notes of mangosteen, cantaloupe, and pomelo. This year they only produced 20kg, and we bought all of it.
- Venus is the closest thing they have to a classic Geisha, but just with an incredible intensity that you'd never get with most Geisha. Very intense but perfectly harmonized and seamlessly layered. We find notes of yuzu, grapefruit, and jasmine. This year they only produced 15kg, and we bought all of it.
