Degassing notice
We recommend degassing this coffee for at least 35 days, up to 70. Our coffees often peak around 45 days and 60 days post-roast and are best enjoyed from then until the 90 day mark.
Our omniroast style leads to abnormally long degassing times, but just trust us, once your coffee is degassed properly, you're in for a treat.
*Please make sure not to vacuum or freeze the coffees while it's degassed enough.

Yellow Caturro - Classic Washed
Peru
We're super excited to introduce Finca El Morito, our newest friends and partners, from Peru. We've been in talks with them since May of last year, and we were really impressed with their samples at the time. During SCAJ 2024, they visited Tokyo, and we were able to meet with them and agree to partnering up this spring!
All the samples we tried from them, both last summer and during SCAJ, were very impressive, but this lot specifically which they've dubbed "Yellow Caturro," was especially unique. According to El Morito, this "Yellow Caturro" is an anomaly of Yellow Caturra, the lot's flavors were far more vibrant and tropical than the average, almost akin to flavors you'd expect from a high-grown Geisha.
In the cup we find a forefront of sweet passionfruit, quickly transitioning into vibrant red grape, with a light finish of lavender florals.
Our tasting notes:
- passionfruit, red grape, lavender
Area: Cajamarca, Peru
Altitude: 1700-1900masl
Varietal: Yellow Caturro (Yellow Caturra anomaly)
Process: classic washed
