Degassing notice
We recommend degassing this coffee for at least 35 days, up to 70. Our coffees often peak around 45 days and 60 days post-roast and are best enjoyed from then until the 90 day mark.
Our omniroast style leads to abnormally long degassing times, but just trust us, once your coffee is degassed properly, you're in for a treat.
*Please make sure not to vacuum or freeze the coffees while it's degassed enough.

Maragogype - Dark Room Fermentation Natural

This is our very first time experiencing one of Panama's newer inventions, the "dark room fermentation" natural process. Selected by and recommended by our friend JV, this process results in a natural coffee that has very bold flavors while not retaining any funky or fermenty notes. We've found that this process gives us a super clean and bright coffee that highlights the cultivar's characters, very different from the typical natural process coffee.
In the cup we find bright and juicy guava, followed by a vibrant note of sweet muscat, finished by a perfumed lychee through to the aftertaste.
