Degassing notice

We recommend degassing this coffee for at least 35 days, up to 70. Our coffees often peak around 45 days and 60 days post-roast and are best enjoyed from then until the 90 day mark.

Our omniroast style leads to abnormally long degassing times, but just trust us, once your coffee is degassed properly, you're in for a treat.

Cupping review

This Sydra has incredible flavor intensity for a classic washed coffee. Bursting with crazy bright and floral flavors with hints of sweet spices: expect juicy apple, sweet mandarin orange, chrysanthemum florals and vibrant flavors of ginger ale.

Hacienda Santa Gertrudis

Santa Gertrudis is especially well known for its unique and diverse selection of the competition style coffees, such as a C.M process coffees in collaboration with an Australia based company. Our friendship started in early 2022 as the farm owner, Jose Eguiguren contacted us on social media. As we initiated direct trading from producers recently, we asked him for some samples. Amongst all the samples Jose sent us, we picked a honey processed Geisha and this Sydra.

Sydra flavors

While most classic washed Sydra is considered as subtle and delicate coffee, we did encounter few of great Sydra varietal lots that offers incredible flavors. In our experience, those great Sydra often delivers some of unprecedented flavors that reminds us of coke, like Coca Cola and ginger ale. We can honestly say this lot is one the incredible Sydra coffees.
