Degassing: we recommend degassing this coffee unopened for at least 45days. Best from 60days to 90days post roast.*depending on the storage condition. For details please refer to our storage page.
*Though we are sorting out defects after roasting and our greens have passed through mechanical/hand sorting at farm level, small stones can be found in coffee beans, it's not harmful to health as it's roasted but please sort them before grinding to avoid risk damaging your grinder just in case.
So much going on, Wilder Lazo is incredibly clean and vibrant with lashings of lemongrass, chamomile and passionfruit, accompanied by notes of lime, yuzu, lavender, rose, sweet jasmine, displayed on its amazing brightness. Due to extended anaerobic fermentation, this coffee has unprecedented intensity for a washed coffee but every flavor stays in the range of Geisha flavors, that is different from fermentation notes. To our palate, the processing just boosts each note of their Geisha to an incredible level, we would call it the "extended" Geisha flavors.

We have heard of his name as one of the most ambitious progressive style coffee producers. We decided to get his Geisha this season following our friend's recommendation: our very good friend who won the COE 1st place several times, Wingo from Fincas Mierisch kindly recommend this Geisha. According to him, it was the most surprising Geisha and we also feel the same.
