A Gem from Processing Master
This is our very first purchase from Sumava farm, owned by our exporter in Costa Rica, Francisco Mena. Been purchasing from his company "Exclusive Coffees", so happy to roast his coffee finally!
While he's known as a great exporter in Costa Rica, he's also respected as expert of coffee producing. This time we bought a clean "cherry reposado process" red honey Villasarchi. In this process, all the cherries experienced 60 hours of resting process in a cold area then de-pulped so that more ripeness and sweetness are given to the final cup quality. After de-pupling, they added mucilage and Cascara from the cherries themselves to the fermentation tank for another 24 hours of fermentation process.
Sumava delights with delicate fruit flavors. Expect orange, jasmine and lime followed by sweet melon after taste.
