A New Project in Cauca by Banexport
Juan Martin is an experimental farm supervised by Banexport which is the most renowned exporter in Colombia. They help their partner farms with selecting cultivars and optimizing processing for each condition. Following their advice to remove mucilage in a cold climate of 2050masl highland, this washed process includes 24hours fermentation of cherry followed by 48 hours fermentation in their fermentation tank after pulping.
