The Typica "Carvajal" and honey process
Los Pinos farm has won the COE with their Typica(mostly honey process) many times including 2nd place in 2018 and 2021! The owner, Orlando is especially passionate on his honey processing and his Typica trees are called as "Typica Carvajal" by local coffee farmers as it tastes and acts somehow different from usual Typica.
This year we are so fortunate to get his Typica honey process coffee and this lot reminds us of great high grown Geishas with its very vibrant florals yet this coffee is more fruitiness forward(probably due to the cultivar). Opening with delicious ripe yellow kiwi, followed by vibrant muscat notes and delicate jasmine florals. This full-bodied yet juicy coffee has a a pleasant creamy chocolate sweetness underlay the sweet peach flavors and spicy orange notes that appears as it cools.
