Degassing: we recommend degassing this coffee unopened for at least 50days. Best from 60days to 80days post roast.

*Though it least likely happens, but sometimes small stones are found in both roasted/green coffee beans even from top notch coffees, it's not harmful to health but please sort them before grinding to avoid risk damaging your grinder.

Astrid Medina Coffees/Buena Vista farm 

Our very first purchase from Tolima is a promising coffee by a legendary producer. Astrid Medina is the COE champion of Colombia North 2015. We intendedly chose these 2 hybrid cultivars amongst her beautiful coffees as we believe those hybrid/high-yield cultivars represent the Colombia terroir the best and some best Colombians are always hybrid ones, especially blends. We've already fallen in love with their coffees and decided to purchase more(amount and cultivars) next season. We really enjoyed each cultivar and blending a lot. As for the blending ratio, we roasted them each and tried blending at the cupping table. In the cup, besides getting layered acidity, we've got some hidden character by blending them. 

Our Tasting

Both Castillo and Colombia have pleasantly tart acidity that is often found in best quality hybrid cultivars(especially Tabi, Castillo and Variedad Colombia) from Colombia.  By blending them, we've got tart yet soft acidity that accentuate its sweetness and texture which this farm is renowned for. In the cup, each cultivar's flavor is vibrantly remains, expect delicious pink grapefruit followed by molasses sweetness that leads the way to sweet macerated pineapple with hints of crisp kiwi and starfruit that we got by blending.
